I couldn't resist showing you a couple of pictures of this morning's sunrise....God makes the most amazing colors!
Some mornings I just sit, holding my breath, watching as it unfolds. Sigh.
I finished a couple of wool pieces this week in between bouts of preparing for the We Support You bloghop. My day is February 9th and I'm all finished though my pictures haven't been taken yet.
Since we haven't gotten any snow yet this winter I just made my own snowman.
This is the first time I've added piping to a pillow and I found it was easy to do....just that I didn't do it correctly. :) However, I learned and will be changing my corners and ending the next time.
And because the colors were perfect for my house I stitched up these quick stars.
I liked the contrast of the textures in these outdoor pictures but it's probably going to reside right here on my sewing chair!
And now for my recipe question. Next weekend, both Saturday and Sunday mornings, I'm going to be feeding breakfast to about 8 big men - 8 football coaches who are hearty eaters. I need any tried and true breakfast casserole recipes and tips for preparing large breakfasts! I've done this the last couple of years but for the life of me I can't find the recipes I used before. I can look on Pinterest or Recipe.com but I want something you've actually made so I'll know it's good. After all, who can I trust more than my blog friends? :)

For crowds, I usually fall back on overnight breakfast statas, where you layer bread and eggs and fillings overnight and then pop into the oven in the morning. Crock pot french toast is also a crowd pleaser -- I just google for those recipes when I need them. :) I love your pillows!

ReplyDeleteLove the morning colors! Like gpc, I always rely on a strata for a large breakfast group. And I have done the crockpot french toast, too. Both hearty, filling, and warms up those large men.

ReplyDeleteLove early morning sunrises. Sweet snowman, and the circles and starts are gorgeous. I make french toast casserole from Paula Deen. But I can make fast waffles since I have a commercial one and can make a waffle ever 2 minutes.

Got this recipe from Castic Ward. They had a Christmas breakfast and served this!
2 16 ounce cubed or shredded frozen hash brown packages
1 cup or less melted butter
2 cups cheddar cheese, grated
2 cups jack cheese, grated
2 cups diced ham or bacon
1 can evaporated milk
6 eggs
½ teaspoon seasoned salt
Grease a 9 x 13 pan. Press in hash browns to form crust. Pour melted butter over hash browns. Bake at 425 degrees for 25 minutes.
Fill pan with alternating layers of cheese and ham or bacon.
Beat eggs, min milk and salt together. Pour over potatoes. Bake at 250 degrees for 30 minutes or until a knife comes out clean. Serves 12.

ReplyDeleteIngredients
• 1/2 cup butter
• 1 cup packed brown sugar
• 1 loaf 2 day-old French bread, cut into 1” slices
• 5 eggs
• 1 1/2 cups half-and-half cream
• 2 tablespoons pure maple syrup
• 1 teaspoon vanilla
• 1/2 teaspoon orange extract
• 1/4 teaspoon salt
• Cinnamon
Instructions
1. In a small sauce pan, melt butter and brown sugar, stirring occasionally until smooth. Pour melted mixture into a lightly greased jelly roll pan (18"x13"x1″), and spread out evenly over the bottom of the pan.
2. Arrange bread slices in a single layer to cover the pan (as many as will fit).
3. Add eggs to a medium bowl and beat for 1 minute, then whisk in half and half, maple syrup, vanilla, orange extract and salt. Spoon mixture evenly over each piece of bread. Cover, and chill at least 8 hours, or overnight.
4. When ready to bake, lightly sprinkle the tops of the bread with cinnamon. Bake uncovered at 350 degrees (175 degrees C) for 25-30 minutes or until lightly golden then flip all the slices of bread over and broil until the tops are golden.
Overnight eggs benedict casserole recipe
Ingredients
Casserole
• 1 pound Canadian bacon, diced (leftover fully cooked ham can be used instead)
• 6 English muffins, diced
• 8 eggs
• 2 cups half-and-half or milk
• 1 teaspoon onion powder
• 1 teaspoon salt
• 1/2 teaspoon freshly ground pepper
• 1/2 teaspoon paprika
Hollandaise sauce
• 4 egg yolks
• 1 tablespoon freshly squeezed lemon juice
• 1/2 cup unsalted butter, melted
• pinch of salt
Instructions
1. Butter a 2 1/2 quart baking dish.
2. Layer half the Canadian bacon in the prepared baking dish. Spread English muffins over meat and top with remaining Canadian bacon.
3. In a mixing bowl, whisk the eggs with the half-and-half, onion powder, salt, pepper and paprika.
4. Pour the egg mixture over the casserole.
5. Cover baking dish with plastic wrap and refrigerate overnight.
6. In the morning, heat the oven to 375F.
7. Cover the casserole with aluminum foil and bake in preheated oven for 45 minutes or until the eggs are barely set.
8. Remove foil and continue to bake the casserole for an additional 15-20 minutes or until eggs are completely set.
9. Remove from the over and let cool slightly while making the hollandaise sauce.
10. Place the egg yolks and lemon juice in a stainless steel bowl. With an electric hand mixer, whisk until the mixture is thickened and doubled in volume.
11. Place the bowl over a saucepan with very little simmering water (the water should not touch the bottom of the bowl) and continue to whisk rapidly slowly drizzling in the melted butter.
12. Whisk until the sauce is thickened and doubled in volume.
13. Remove the bowl from the heat and stir in the salt.
14. Serve hot over the casserole.

Country Grits and Sausage
2 c. water
1/2 c. quick cooking grits
3 1/2 cups (14 ounces) shredded extra sharp Cheddar cheese
4 eggs, lightly beaten
1 c. milk
1/2 tsp. dried thyme
1/8 tsp. garlic powder
1 1/2 pounds mild bulk pork sausage, cooked crumbled, drained
Bring water to boil; stir in grits. Return to boil; reduce heat to low, and cook 4 minutes stirring occasionally. Add cheese, stirring til melted.
Combine eggs, milk, thyme, and garlic powder; stir well. Gradually stir about 1/4 of hot grits mixture into egg mixture; add to remaining hot mixture, stirring constantly. Stir in sausage. Pour into lightly greased 11"x7"x1 1/2" baking dish.
TO STORE: Cover and refrigerate up to 8 hours.
TO SERVE: Bake, uncovered, at 350 degrees for 50 minutes, or until set.

ReplyDeleteWhen I worked for a treatment center for abused kids, we went on a lot of camp outs. We would fry bacon, then fry potatoes cut into small pieces in the bacon grease.....crumble the bacon and put it back in with the potatoes fried potatoes....then scramble a bunch of eggs in with it.... serve with hot sauce and big ole biscuits ! It's a filler upper for sure !

ReplyDeleteChocolate Gravy over homemade biscuits
4 cups sugar
1/4 cup cocoa
1/4 cup self rising flour
2 sticks butter
7 cups hot water
Mix dry ingredients with a little of the hot water until lumps no longer show. Add remaining water and cook on med high heat until mixture starts to thicken. Cook to the consistency you want, on the thinner side?? or the thicker side?? Remove from heat and add butter. Allow to melt throughout the gravy.
Ladle over hot biscuits and watch their faces! :)
Catching up a bit here and found I had missed this post. I love to see the colors God paints in the sky early in the morning - but most of all in the evening. Your pillows are wonderful. My favorite is the darling snowman. What a cute pillow. He adds a bit of whimsy to winter!
